12-Micron’s name is inspired by the venue’s ethos to celebrate Australian produce, taking the best ingredients and refining them into an evolving menu of dishes. Its namesake is the rare coveted fine 12–Micron wool fibre, which, much like an ingredient in the kitchen is refined into a beautiful garment.

12-Micron’s two-hat chef, Justin Wise explains "We wanted to create a truly contemporary Australian restaurant – a place that celebrated the very best we had to offer. The menu is designed to showcase local produce. Even our crockery has been made by local potters. It’s casual, beautiful and modern, much like Australia itself".
